After many weeks of wasting time with Adaptec/Roxio's EZ CD Creator, I can say that it is NOT the solution for burning MP3 CDs for use with my JVC SH-99 MP3 player. The JVC requires an ISO (not Joliet) CD format, and I bet this applies to other MP3 head units as well.
Simply put, EZ CD Creator's ISO support sucks. They have options for long filenames within the ISO format, but it doesn't work - you still get 8.3 format when naming files, and you can't use spaces. Spaces are important when naming folders so they look nice. (It's not so important for MP3 files - you should be using the ID3 tag anyway).
Nero allows ISO format with long filenames with ASCII character sets - meaning you can use spaces in folder names, and they are correctly understood by the JVC unit.
If none of this makes sense - just use Nero to burn MP3 CDs. I think it's a better CD burner utility anyway.
