How often should the oil be changed in a 2011 ford explorer?

The manual says something like 6000-7500 miles. That is probably true as far as having the oil start to break down. But my take is that the problem isn't the oil, but the DIRT in the oil.

I change mine (and filter) every 2000 miles. Is it overkill? Probably. But I've never had an engine problem in 44 years doing this.

2000 isn't quite over kill if your using conventional oil which should be done every 3000mi. If your running synthetic then do it every 6000-12000 depending on the manufacturers recommendation

I run mobil synthetic and change it every 6000mi so that I do the oil change and tire rotation at the same time.
