Doors lock and unlock electrically, and manually (with the key) in warm weather. The colder it gets, the more I have to jiggle/screw with the key to get it to unlock. I'm thinking the tumblers are just sticking?

What do y'all recommend to spray in there?

any parts place will sell lock lube & de-icer. small can that sprays powdered graphite & cleaning fluid in key hole.

First thing I usually do is open the keyhole with a small screwdriver, and blow compressed air in to clear out dirt and debris.

Use powdered graphite sparingly. It builds up, and freezes with moisture.
