    Whats for Breakfast?

    Spicy Layered Mexican Skillet is what.

    Spicy pork sausage, eggs, served on soft corn tortillas.

    Ingredients:
    1 lb bulk spicy pork sausage
    2 cups of beaten eggs (about 10 xtra large)
    1 cup salsa ( I used a hot)
    1 sm can diced green Chile- drained
    1 cup shredded Mexican cheese blend
    2 doz corn or flour tortillas or 12 burrito size flour shells

    Cook:
    Brown the sausage in a deep 10" skillet, and drain. Remove from pan, and set aside. (I place it in a bowl on paper towels to wick away any juices)

    Cook the eggs until fluffy, then press flat into pan, then add cooked sausage

    Layer the salsa & diced green Chile

    Add the cup of cheese evenly, and cover. Simmer on low low heat, until cheese is melted.

    You should be to the top of the skillet at this point, and will take about 7-10 mins to melt the cheese, and heat the veggies added.

    Spoon mixture into your choice of shells, and enjoy. This will feed 6 people, or 4 people with an abnormal hunger.

    I garnished mine with some sliced Mexican testicle fruit, my fav hot sauce, and on doubled up, steamed corn shells.

    For shells, I cook them a few different ways. Here is some ideas for those that haven't.

    Corn shells:
    Easy Steam: Wrap 6 shells in damp/wet paper towels, cook in Microwave for 1 minute.
    Skillet: A little butter in a hot skillet, then cook each side until they start to brown in spots & hot to the touch
    Fire: Low Open flame & tongs, place over flame until it starts to brown, flip, and done when it browns in spots.
    Fried: Drop into a little hot oil in pan, and flip after 45 seconds, cook another 45 seconds or cook for 1.5 Minutes in deep fryer

    Flour shells:
    Steam: Same as above
    Skillet: Same as above

    Appetizer: 6 Coors Light bottles

    Meal: chopped up leftover beef roast soup; added one 32oz beef broth, one heaping tbsp of steak seasoning, one heaping tbsp of Italian seasoning, frozen country style vegetables, and some red pepper flakes for heat.

    Made some instant mashed potatoes, and poured that over it...

    Never been a fan of instant Tater's, but I have been trying those "Gourmet" Instant mashed Taters, for camping meals.

    Some of them are pretty damn good. When out in the wild at 12,000 ft up on a Mountain side, after a long day in the cold, they taste even better!. lol

    Yea, for a quick lazy side, they work for me.

    I buy mine from a local grocery store deli. $5 per bag. I usually liven them up with some garlic powder and dry grated Parmesan cheese.

    Leftover Potato Pearls with garlic powder and Parmesan, with Chunky Chicken Noodle soup poured over it. Cheap eats :popcorn:

    Salad of Napa cabbage, celery, carrot, Bac-Os, sunflower kernels, and Western dressing. Homemade cabbage burger from a local grocery store. Homemade egg potato salad.

    Made my "Pork Verde" with both pork chops and sliced rump roast. Used one can cream of mushroom and one can cream of celery instead of the usual all cream of mushroom. It's what I had on hand. Served over white rice. Could have used more time in the oven, but I was hungry. Pork chops were a bit tough, and the rump roast still a bit hard to cut with a fork.

    Things sound better when your hungry. They don't always taste better, but, if you can stomach it, and it makes a turd, it did its job. Lol

    Can of soup and half sleeve of crackers last night.

    Grabbed a beef roast on sale, but wanted to try something different instead of my version of the three packet roast.

    Ran across this recipe. Sounded good and had everything I needed. The liquid was spicy hot, but when I mixed it with the shredded meat, it was mild with a slight kick. I microwaved a potato, cut it up, put a layer of refried black beans, and put the shredded meat on the top. Good. Next, I put a layer of Fritos, layer of refried black beans, and put the shredded meat on the top. Good. I didn't have any tortillas, otherwise I would have made some soft tacos. A squeeze of lime would have been good to add though...

    Edit: I only shredded ¾ of the roast and left the other piece to cut. After a few late night adult beverages, I sliced some, and put it on a Parmesan cheese crusted bagel. The spices didn't really penetrate into the roast, but it was still tender :thumbsup:

    2 big spicy chicken strips- Pure Honey
    10 jumbo shraaamps- cocktail sauce
    & 1 coke, no joke.

    Local truckstop for dinner. Had meatloaf as a lunch special, and still had some left when I was done drinking my dinner at 6:00pm, so I got an order of that, mashed potatoes, corn, dinner roll, for $7.99.

    Appetizer: seven Michelob Ultra bottles

    Dinner: a grocery store I deliver to takes their pulled pork, and mixes that with their deli mac & cheese. Had that, toasted sesame seed bagel with peanut butter, and store brand vanilla sandwich cookies.

    Made this again. This time, I took a third of the meat out and left it in chunks for sandwiches, and tossed the shreds in all the liquid instead of setting some aside. There is too much liquid in the meat. Still good though :thumbsup:
