Need Help with Choosing Right Tire and Wheel Size

2002 Ford Explorer XLT V6
I have a 2002 Ford Explorer XLT 4.0L V6 that I am looking to upgrade the tires and wheels.
I am interested in these RTX Black Widow rims.

As for the tires, I want something with a somewhat thick sidewall to give the "off-road" appearance and I've decided on these two tires:
Toyo Open Country A/T III - SIZE: 255/55R18
Falken Wildpeak A/T Trail - SIZE: 255/55R18

Now I know it will throw the speedometer off a bit but I will fix that once I decide on what wheels and tires I want. I'd like to avoid lifting my truck and just fill the gap more and avoid rubbing. Both of these wheels basically have a diameter of 29" and I'm pretty sure they would fit easily with no problems. If I'm wrong, please let me know! Please let me know which tires would be the better option!

For a closer match to stock rolling length, 20" Rims with 275/45 is closer to stock.

I think if you check the offset and that is good, you should be golden.
