Need Tire Advice... How Large Can I Go On OEM Rims?

I am getting a used 2003 Explorer XLT. I want to fill up the wheel well with something nice - maybe a mud terrain or a BFG All-Terrain T/A. My question is: How large can I go on OEM rims and stay safe? OEM size is 235/70-16.

Does anyone have Kuhmo (sp?) muds? Boy, their prices are sure low!

255/70/16 - BFG All-Terrain KO's - not the biggest but anything bigger looked gaudy without the front raised up some, in my opinion.
