Since the hunting season is upon us, I though it would be a good idea to post your favorite recipe for other skilled (or lucky) hunters to enjoy. Here's mine.

Hearty Venison Potpie

Ingredients:

3 T All-Purpose flour
1-1/2 lb boneless venison cut into 2” strips or chunks
2 T cooking oil
2 medium onions, thinly sliced
2 medium potatoes, peeled and cut into bite sized pieces
1 medium carrot, sliced
1 celery stalk, sliced
½ C frozen peas
1 C Beer
½ C beef broth
2 T tomato paste
1 Bay leaf
½ t dried thyme, crushed
1 T All-Purpose flour
1 prepared pie crust
¼ C Beer
Milk

Preheat oven to 450

Directions:

In a shallow dish combine 3T flour, ¾ t salt, and ½ t pepper. Coat meat with floor mixture. In a deep pan, brown the meat in hot oil. Remove meat from pan. Cook onion in drippings till tender. Drain fat.

Return meat to the pan. Add the potatoes, carrots, celery, the 1 C Beer, broth, tomato paste, Bay leaf, and thyme. Bring mixture to a boil, reduce heat. Cover and simmer about 1 hour or till meat is tender. Discard Bay leaf. Add peas.

Stir together the ¼ C beer and 1 T flour. Add to the meat mixture and cook and stir till thick and bubbly. Turn mixture into a 1-1/2 quart casserole. Place pastry on top and turn edges under. Cut slits in crust to allow steam to escape. Brush top with milk and cook in a 450-degree oven for 15-20 minutes or till brown.

best fried deer steak batter on God's green earth-

some milk
some mustard
1 egg
a little worchestershire
a lot of salt
a lot of pepper

keep adding mustard until its a pale yellow paste. you wont taste the mustard once fried (i hate mustard). if you get it right, it will be the best fried deer steak you have ever eaten. :)
