What wheel offset will work best?

Ok so I have a 2000 XLT 4dr 4x4 4.0 SOHC with the 255/70/16 wheel package, it is going to be used at a deer lease in SE Texas. I will be doing the shackle and torsion bar "lift" so I can fit 265/75/16 mud tires on it. Since this was a "roll over prone" year I want to widen the stance a bit since it is getting "lifted", or am I over reacting to the roll over aspect and a 1.5 - 1.75 inch lift and just a wider tire will work fine? I want to stay away from the spacers and just get an offset rim if I do need to widen the stance. If I need to widen the stance what wheel size, offset and tire size should I get without having to trim fenders?

Forget about the rollover prone hysteria.

If you keep it maintained correctly you won't have any problems.

My 00 has 4" of lift in the rear and 2" up front.

With the proper shocks and the Explorer Express rear swaybar, adjusted properly with F250 front swaybar links, the damn thing goes around corners better than a lot of cars I drive or have driven.
