Off-Oven Roast Beef Recipe

Had no garlic cloves, so put extra garlic powder and olive oil in mix. Was only 120° after two hours. Baked at 350° until temp hit 135°, removed from oven, and let it sit for a bit before slicing. Some tough/chewy areas, but I used a cheaper roast. Will pry try it again.
