Labor day dinner: Reverse sear thick cut Ribeyes, New potatoes smothered in butter/salt/pepper, 3 alarm baked beans.

Montreal Seasoned 1.5" Ribeye steaks placed on wire rack, on foil lined baking sheet, cooked in the oven @250* until internal temp was 125* (about 45 mins).
Large cast iron skillet heated very hot, until 2 tblesp of pure Sesame oil started to smoke. Dropped in steaks with 1 tblsp of salted butter, seared both side at about 2 mins each side, until heavily browned, and internal temps @140* for a medium steak.
No resting required, goes from pan to table.

Absolutely amazing & one of the best steak I ever had.

A Pina Loca from Azteca: Grilled Steak, Chicken, Shrimp, Bacon, Cheese and Pineapple chunks served in a grilled pineapple half. And Rice. And Beans. And a Coke. And it was good.

Pork sirloin steaks with liberal amounts of slap ya momma and sweet baby Ray's sweet and spicy BBQ sauce, Roasted home grown pink girl tomatoes with Italian seasoning, olive oil, garlic and Parmesan cheese, Foil wrapped bakers all on the grill.
I found a way I can eat tomatoes other than in sauces and pizza. although, these are kinda like a little pizza.

Had a bag of frozen Select New Mexico Mild Green Chile Peppers I wanted to use, Frozen Chile | Select New Mexico

Dug around for a recipe, and ran across this one: Chicken and Hatch Chile Stew - Life Made Simple

Mostly just used that recipe to get an idea of what spices to use.

I kinda just threw stuff in a stockpot...

One bag of the above mentioned green chiles
Four cups of chicken broth
Two 5oz cans of Sweet Sue Chunk Chicken Breast (too lazy to cook chicken)
Coriander, cumin, salt and pepper in the amounts in the recipe, but eventually added more.
Garlic power and onion powder (didn't have fresh on hand)
Two cups of uncooked brown rice (had ½ bag I needed to use up)

Simmered that until the rice was done. Added water as needed, and additional spices. Some cayenne powder to add some heat. Added 8oz frozen corn at the end. Note: that much corn is too much.

Overall, not bad for just throwing stuff together. Crushed white corn chips is good on top also. Not much heat-wise, but the back of my neck is sweating :snicker:
