When replacing the exhaust manifolds should I use studs or bolts? Originally there was a stud on each end then 4 bolts in the middle. Drawback to studs is replacing gaskets is harder in the future. Then after I decide that... Steel or Stainless?

Not sure but I would suggest you seek out quality hardware. Nothing worse then galling out a cheap stainless bolt. Check out ARP. They may have a kit just for that.

The studs are nice for changing manifolds because the bolts often snap

Early 4.0 used all bolts
Later 4.0 uses studs. Usually have less issues with the studs

You should have to change exhaust gaskets again they should last 200k + miles
