Stock Alarm, and a few aftermarket alarm questions..

I have a Viper 790 I am thinking about setting up. I went to a local installer and he told me that I need two of the keys. I was curious as to why I need to give him two of the keys. I understand they have the chip in them, but are two keys required for him to disable to stock theft system. Also, if this is the case, how can I disable the stock theft system myself? If I can do it myself, It will save me $40.
