I found a Hidden Hitch class 3 2" receiver hitch. It is part #70647.

The description says that it'll fit 1995-2001 Explorer 2 and 4 doors, except those with spare tire with 17" rim and all-terrain tire.

Does this mean that it should fit without a problem on my Eddie Bauer? I have a spare tire with 16" rim, tires are General Grabber (255/70/16 I believe).

Nope, you'll be fine. I've got the same tires and hitch that you're talking about and they both fit fine.

If I get new wheels/tires, and keep the stock spare.. would that work temporarily if I needed it or would it be problematic for the AWD?

the awd is just a power split 4X4 stuck in the on position... (35 front 65 rear) so haveing one wheel smaller would cause wear on the difrential but it would be neglegable if only done in emergencies for short distances.
