2004 Ford Explorer pending p0300

I am having a difficult time in trying to find what could be causing a p0300 code.
Some context: so recently, sometimes when you floor the accelerator and try to pass someone on the freeway or try to go faster, the CEL light will flash on the dashboard. When I scanned it with a OBD2 scanner, I will only get a p0300. But as of now, I am noticing a pattern. When it happens, it is always on highway speeds. The CEL will flash between 5k and 6k rpms. The rpms will stay stuck around 5 to 6k, struggling to shift to the next gear. The car idles and runs perfectly on normal city driving.
Background: Engine is the 4.0 V6. Engine was replaced around with a lower mile one around 10k miles ago, with new timing chains and other parts. The first time it happened, I changed the spark plugs, spark plug wire and ignition coils with Motorcraft parts. Fuel filter, accessory belt, air filter were replaced around 4 months ago (2000 miles ago), all Motorcraft parts. Throttle body and Accelerator Pedal Position Sensor were replaced around 10 months ago. I really don't want to be throwing a lot of parts to this car. Any help with be appreciated!
