carb vs fuel inj? b&m trans?

hey, i was watching Trucks on TNN today and it raised a few questions i have.

they introduced chevy's newest crate engine. it seems as if crate engines all prefer carburators over fuel injection, even on the newer ones. my understanding was that fuel injection is much better. why do these big blocks still use carbs?

i also dont understand these B&M automatic transmissions. why do these transmissions only have 3 gears and some only have 2?? isnt more gears like 5 in our ex's better?

how do those automatic shifters work, the ones that just go back and forth? how are they better? do they work for any transmission or do you need one of these special b&m trans?

and if your so concerned with performance, why do people prefer these automatics over manuals? some say because the torque convertors will produce more torgue because of the gear down, but why not get a lower geared manual for the same effect? is it just that we cant make clutches strong enough for some of these big blocks?

just a bunch of auto questions i've had that i can't really find easily online. thanks.

because they are all TH350, TH400, or Powerglide trannys. this is the way they came, with no overdrive

the auto can handle the power of a 500hp+ bigblock. also, a high stall torque converter will give ALOT more traction off the line. gearing down with a manual tranny will only give you more wheelspin, which isnt what you want in a bigblock pickup truck.
