Is there any reason to or not to change to a lower temp thermostat ( from the stock one )?

If you need to change your thermostat, stick with the 195* one. The computer reads the coolant temp and if it is too low, it will not lean out the air/fuel ratio. You will run rich and lose gas mileage.

If you are concerned about operating temps, try AMSOIL. Reductions of 20 to 50 degrees are normal. You will also see an increase in fuel mileage, better performance and longer component life.
