I noticed our 2014 Explorer had a build up of ice on the inside of the windshield. Had the truck parked outside last night for approximately 6 hours and was like wow.

I tried to attach pictures and hopefully they came through.

Yes, and that is what we are trying to figure out. That is also why I took pictures. I have a video also. I attempted to scrap and some
of the ice could be seen on the dashboard, but that wasn’t going well, but I was able to see enough to pull back in the garage. Ford is closed today but I will call tomorrow.

It isn't unusual at times to have frost build up on the inside. Usually it is caused due to a high humidity build up inside the vehicle. Using 'recirculate' will can also at times contribute to it.
Please add the 2014 (Base, XLT, etc.) to a signature if you still have the 2002 so members know you have it. Thanks.

I have found that if I am out tromping around in the snow and get into the vehicle and the snow melts off of by boots and ends up on the floor mats it will end up on the windshield sooner or later if I don't leave a window open when it is in the unheated garage.

I have actually found that it is quite common

If all the windows were closed then you must have water inside the vehicle. Check floors for the boot melt as already stated but check entire rug to see if it is wet. Water likes to go under seats so don't overlook there. Check spare tire well. I looked a a new 2017 and the rear window was leaking and the spare tire well was full.
