At least two of the 39 square feet packs. I used one and did the doors, under the front seats, and the cargo area. To get the roof would use another 50, so while you're at it get a third for the sides and remainder.
So I'd say three.
There are pics in my gallery of how much one 39 sq ft. pack covered.

I have pics of all the dynamat I put inhere and that took 1 and a half bulk packs of dynamat extreme. I didnt even come close to covering everywhere. I did most of the cargo area pretty well, and just put patches everywhere else. I ran two strips, one sheet wide, down the length of the roof, and didnt even touch the floor. IMO, you would need ~3 bulk kits if you wanted to cover EVERYWHERE.

How would you do the floor? Remove the seats and just run it along or something? Has anyone done their dash? Im scared to try that, I might have to pay the audio shop for that

if you want to save alittle money you can use that self expanding foam on the body cavities. And you can use 3m spray glut and glue carpet padding to the sides inbetween the panel. Supposedly the carpet padding stops more sound that dynamat. Also as a cheap knock off you can use ice guard from home depot. Its basically the same thing as dynamat (aluminum with tar to hold it down) While dynamat is probably better just use two layers of the cheap ****. And some people say your car will smell if you use the ice guard, mine did'nt what so ever. 25 square feet is about 12 bucks.
