P2096, bad fuel trims help!

Hi all! Just got my 2016 Ford explorer Sport with 56,000 kilometers on the clock (around 35k miles). Acquired it from the first owner.

The car has 3” downpipes, connected to 3” pipes (1 per bank) , each pipe ending with a borla muffler.

I recently discovered that whoever fabricated the exhaust had wrong O2 sensor spacings (up stream is near the turbo (4-5 inches), downstream sensor is around 5 inches away from the upstream for bank 1, and for bank 2, only the upstream was installed. Bank 2’s downstream was left hanging.

Question is, given that This scenario can throw a P2096 code, could this possibly affect my fuel trims?

Short term fuel trims for both banks are close to zero (hovers +\- 3-4) while my long term fuel trims are crazy at around 28 / 32.

The car has no drivability issues. Checked for vacuum leaks already and fixed my exhaust leak as well but still high LTFT.

Last question, can a remap/ tune turn off the oxygen sensors? Thanks guys!

I'm not 100% sure, but typically the downstream O2 sensor will not affect fuel trims.
The P2096 code is very likely caused by the hanging Bank 2 downstream sensor, but I don't think it will impact fuel trims.

The upstream O2's provide feedback to the ECU to control fueling.
The downstream one is for the ECU to monitor how well the catalytic converters are working by comparing to upstream O2.

Do you have catalytic converters? If so, are the downstream sensors actually downstream of the cats?
