97 Explorer Sputtering/loss of power

hello everyone I have been dealing with this issue for a week now and it’s driving me crazy. For starters I have a 1997 Ford Explorer XLT 5.0 AWD with 230K with a training rebuild at 150K. Basically it started when I went to pass someone on a diet road and had to go in a ditch that tipped my truck to the right side and about a mile after that happened my truck started sputtering like rapid sputtering and I lost about a 1/4 of my power. I have just recently about 4 weeks ago installed a set OBX ( torque monster ) headers ( which by the way I had a ***** getting them to seal, I have still have an exhaust leak ). I will post a list of mods and what I have replaced and checked below. My truck idles fine upon cold start and runs good until I start driving it and about 30 seconds later sputtering and loss of power. Fuel pressure st idle is 29-30 and while driving and WOT it’s at 38-39

Modified air box ( cheese hole )
OBX headers
Full cat back ( upstream cats ) 2.5 exhaust
Flowmaster 40 series dual in/out
Running 33x12.5 att
Downstream cats deleted

NEW PARTS:
Spark plugs motor craft oem
Spark plug wires motor craft oem 8mm
Air filter Ford motor craft oem
Alternator ford motor craft oem
Battery ford motor craft oem
Fuel filter ford motor craft oem
Upstream o2 sensors NTK Oem

As of yesterday I dropped the tank and drained it and noticed a bunch of sediment in the bottom and it had all original ford sending unit and pump on it. So I cleaned it out flushed it let it dry and tomorrow I will be installing the tank along with a new Delphi sending unit and fuel pump along with a new fuel pressure regulator and I also bought new coil packs I am gonna our on also.
