cold start issues...what's up?

I have noticed when my Navajo has been off for extended periods of time, it has issues when I try to put my foot on the gas when it has started.

I hop in the bad boy, start it up and it idles fine. It doesn't take a long time between turning the key and having it come to life. However, as soon as it settles on an idle speed (within seconds), I touch the gas at all and the truck dies. The volt meter in the cab takes a big hit in the negative direction, and sometimes it is able to pull out of it and return to it's normal state and the engine does not die. Sometimes however, it does die.

However, I let it warm up for awhile and this problem goes away, and every time I start the truck for the rest of the day and drive about it isn't an issue. What the heck is going on here? Thanks
