I read some posts about people complaining about their temp gauge not staying still and always going up and down.
I had this same problem until this past weekend. I tried the new radiator cap by the way and that didn't fix it.
Bought a new Jet thermostat from Performance Products, installed it on Saturday. Problem solved.
Someone else may have mentioned this but I haven't seen it.
The old t-stat, I found by pushing it in by hand, that it would open, then bind until more pressure was applied. This explains the temp cycle.
