Excessive condensation from A/C

Recently did some A/C work to this beast and it seems like there is an excessive amount of condensation coming from both evaporators, trying to figure out if I did something wrong while charging the system. This all began because I had a line that was slightly leaking refrigerant (front A/C hose with high pressure valve) so I replaced that line along with the accumulator, orifice tube (a few metal shavings in it), the compressor, rear TXV and most of the orings. Pulled a vacuum, system holds perfect vacuum for 15-20 mins no leaks so I charged it with the specified 56 ounces for vehicles with the rear A/C and all is good except the condensation. I also completely removed the dash to inspect the evaporator (a little dirty but no corrosion or leaks) as well as the fresh air door that is known to fall off and block airflow but both checked out. The system is performing fairly well, air gets nice and cold but I notice after driving around in this Indiana humidity with the A/C blasting for an hour or so, the vents will have a little bit of condensation on them as well as the whole center dash underneath the A/C controls. It seems to only do this after it’s been running for a while or at night when the outside temp drops to around 65° then there’s a lot more condensation to the point where it feels like the entire center dash is soaking wet. I notice after idling in the driveway for a while too there’s a fairly large puddle underneath the front evap drain and rear evap drain, much larger than I’m used to seeing from other cars. I had the vacuum pump on the system for close to two hours so I’m confident there was no residual ambient air or moisture in the system, but perhaps I didn’t charge the system properly? The pressure readings were within spec when I finished, inside the garage was about 95° so low pressure was right around 50-60psi and high side was roughly 250-275psi. I did notice once I turned the vehicle off to observe static pressure, they both equalized around 100-110psi which was normal for the outside temp but then the low side gauge kept rising up into the 200s and almost hit 300 while the high side remained stationary. Not sure what’s going on, I know A/C work can be tricky but hoping someone knows a little more than me about this phenomenon
 






One thing you can do to keep condensation down is to use the air recirculation option. This reduces the amount of humidity the system has to deal with when cooling as compared to constantly pulling in humid outside air.
 






I've noticed lots of condensation with this vehicle too.
That's good though, less humidity inside the car.
