IMO, you'll probably be cruising in the 53 more than you'll be hammering on the gas pedal. So I'd say a block setup that is sensible and not too big -- and drivable a few hundred miles to shows and stuff. If it were me, I'd focus more on the suspension and the body. For the back, maybe a parallel 4-link + watts, or just a parallel 4-link + panhard -- you know, something really blinging.
