I think when I buddy of mine changed the interior color of his 1991 GMC Sonoma he used SEM products. Not sure on which one though...

a lot of work and a lot of cost.
Removing the interior, painting all the components. New carpet new headliner, seat covers, seat belts. Several hundred in replacing the air bags.
There is a lot to it.
