I have decide on the Perfect 12 and a JBL amp, but would like to know which setup would be better, not worried about price difference.

Setup option 1: DVC Infinity Perfect 12.1D (350Wrms) powered by a JBL 300.1 amp, connected @ 2 ohms, rated to 300watts rms.

Setup option 2: Infinity Perfect 12.1 (SVC)(350Wrms) powered by a JBL 180.1 amp, bridged to rated 360watts rms.

SO which is better, less power from a mono block or more power bridged?

more power would be better.....

So it's not better to use a mono block and suffer some wattage?
I would've thought the same, I just wasn't sure when it's best to use a mono block.
Thanks for the reply dave!
I think I am going to order the Perfect & JBL 180.2 right now!

Yeah mono's are typically better, in that they offer some flexibility in low ohm loads.... but for your application you dont need that.
