Oil Sender and Spark Plugs replaced, 93 Navajo

So I had to change my oil sender, fairly common thing to do, and decided to change the plugs at the same time (holy pain in the butt!) since I dont think they have ever been changed since Ive owned the rig. Before swapping everything, my engine temp use to run with the needle on the second hash mark just below the past the C, and would only ever go up when I was climbing a hill. I found that the old plugs were really bad, and the gap was nearly 70 where its supposed to be 54. With the swap complete my engine temp is running just before the thermomotor graphic in the center of the gauge. I know my thermostat is still working as this morning I watched the temp go up to that spot, then come back down quickly and dramatically, then it leveled back out again. The car is running wonderfully. smooth acceleration, great and easy shifting (its a 5 speed stick) doesnt chug when in the wrong gear at too low of speed, no jumping off a light if I accidently pop the clutch, nothing at all that would indicate a problem. So Im curious if there is any concern with the engine temp running nearly in the middle of the gauge. Any insights would be wonderful, Im no mechanic, just know enough to be dangerous, :)

Eh, changing the plugs is a good challenge the first time. You are a bit of a mechanic after all. And you recognize that the thermostat opens and closes as shown by the gauge.

Wild temperature swings indicate there is air in the cooling system. How this happened, given your clues, I have no idea. Did you perhaps peek in the radiator? Need to burp the baby. Top off the coolant every few days. There are more radical ways to get the air out, but just stay with it.
 






What would be the best way to burp it? I didnt open the radiator, but did pop the resoviour tank.
