Shopping for tires for my '96 Eddie Bauer

So I am going I purchase some tires for my Eddie Bauer soon, I am thinking some 31x10.50x15. I have Crager Soft 8s that are 15x7, so that should be fine. But I am curious about the rather large fender flares on the Eddie Bauer… I do not want to trim any of that. So will this size tire fit with no lift? I am replacing the ball joints soon, and leveling it, so there is no variation on height front to rear. If this size tire does fit, what's has everybody tried, and liked. I am looking for ones are are good in rain, snow, and dry roads. So far I have looked at the General Grabber AT, the BF Goodwrech AT, and the Goodyear Authority from Walmart, one more is the Kelly Safari, they are pretty cheap, but haven't seen any reviews for them.

I am currently running 31x10.5x15 s on my stock '97 EB, no issues at all.
I currently have some Falken A/T tires, but only because I couldn't pass
on the deal. My personal preference is the BF Goodrich All Terrain T/A.
I have had them on Broncos, Bronco IIs and on an Escape. I LOVE THOSE TIRES!! Great in the snow and rain and still decent off road traction.
They wear great too. I had My old '78 Bronco in mud up to the doors
and those buggers just crawled right out. Had an Ice storm here one year and drove out to pick up the moms, never had a problem. But that is just
my opinion and everybody has their own:)
