Thermostat Problem

I was wondering if any body else have had this problem. Every year about this time when it gets cold my thermostat gauge goes to normal when I'm pressing the gas and drops to cold when I let off. Last year I went through four thermostats and still did not fix the gauge going up and down but my heat stayed hot so I let it go. Over the fall and summer ran fine and now it's acting up again so I'm going to put a new therostat in tommorrow. I'm very optimistic if is going to help though seeing what I went through last year. If anybody has have this problem please let me know. By the way it is the OHV V6.
