The videos I've watched thus far are about how to replace timing chains while keeping the timing correct.
However, with the timing chain cassettes destroyed as these were, I'm not sure it was in time to start with.
Therefore, is there a video or tutorial on how to time a motor from scratch, as in a complete rebuild?

I understand the cam with the protrusion: the protrusion is supposed to be perpendicular to the plane of the head. The cam with the flat spot is suppose to be parallel with the head. Correct?

Any information appreciated

Look on youtube, search 'Cloyes timing chains' it is useful.

Thanks for replying.
That one is saved and seems to be the best I've watched.
However, he is replacing the timing chains on a motor that was timed correctly to start with.
Is that method the same for motors that are not timed properly to start with or when rebuilding a motor.

My concern is, the left timing chain on this motor was so loose (basically, only the metal part was intact) I'm concerned the motor turned over without turning the cam. The only information I've found regarding this is the flat spot on the left cam should be parallel with the surface of the head. What a mess I'd have if finding out the hard way with motor installed.

You need OTC6488 timing tools, these set timing in correct place for each cam.
Also see on you tube "cruzroycruzroy64" there is a also a lot of helpful information.
Was the engine running OK before removal? This is an interference engine, and chain can jump time and valves hit pistons.
