I used to run 31x10.5R15's on my stock 1999 Ford Ranger 4x4. It did have some bind turning left and right all the way though overall I liked it. I didn't see the need for such large tires and downsized to 30x9.5's and now wish i stuck with the 31's...

you should be good with 31s. Just watch the backspacing and offset, as well as the width of your wheels/tires. Most rub comes from a wider tire or wheel, or one thats pushed to the outside of the truck because of too little backspace. Every truck is a little different though. At most you would have to shave off a little plastic on the back of your front wheel wells.

15in rims will not fit on a 3rd get so you'll be stuck with 16in sized or bigger and you can fit close to a 32 in tire stock, whatever the equivalent metric size is for 16's.

Woops, I didn't even notice it was a 3rd gen. I should stop watching tv and posting at the same time, haha.

265.75.16s are the biggest you'll be able to fit stock. overall diameter comes to 31.65 inches
