the white one...
It looks like I need to tow my 91 Explorer to the shop for repairs.
How can I steer the vehicle and keep from spewing PS fluid all over and pulling air into the system?
Any help would be appreciated...

Use a tow dolly to get the front wheels off the ground. A flat-bed would be even better. Or, you could drain the reservoir before you take off... that should help.

I dunno of anything else that might help...

It doesn't matterif you get air in the power steering system, as it will bleed itself once the fluid is replaced and the steering is cycled loc to loc wtih the engine running.

I'm sure the air isn't the issue... The biggest problem is that if the engine isn't running, and you turn the wheels rapidly (from left to right, I believe... maybe both ways) the power steering fluid backs up into the reservoir, pops the cap off, and pees out all over the place. It used to happen to me every so often in my 90 Ranger if I stalled taking off from a stop sign while rounding a corner... got to be a mess after a while....
