I am looking into getting some sound deadening material for my explorer. I found some fat mat that comes in a 100sq ft package on ebay. How much sq ft would I need to do the entire vehicle( roof, all doors, floor and hatch?)

if your talking all roof, all floor, doors and hatch, i would probably go for more towards 200sq ft. the roof and floor is a lot of area to deaden

depends if you only want to do one layer or not...the more layers the better.

I have 60 sq feet between my front 2 doors only.

WAIT!!!!! before you buy the stuff on ebay becareful, the stuff that I got off ebay worked really well, but the smell of tar was unbearable at times. Come to find out it was roofing tar paper. Don't get me wrong, after sealing it up with spectrum stuff (http://www.secondskinaudio.com/cgi-bin/index.cgi) it worked awesome. But if I had to do it all over again, I would have gone with secondskin for the entire sound deadening. Just my 2 cents.
