Do you have a CEL (check engine light) on? Have you scanned it for active or pending codes?

I do not have check engine light and I haven't had it scanned

Without a check engine light, or having it scanned, you're going to be guessing, for the most part.

You say it does this when it's cold. I had a similar issue recently, after I swapped a motor. I had power, spark, injector pulse, good fuel pressure, etc., etc. I was extremely frustrated. After hours of checking, rechecking, swapping coils, plugs, sensors, and misc. parts, and alot of cussing, I gave up, and went to a buddy, who is the Service Manager at the local Ford Dealership. His equipment determined the coolant temperature sensor was bad, and told the engine to add a ton of fuel, causing over-fueling.

I'm not saying this is your cure, but it's another thing to look at.

I think it will be difficult without checking for trouble codes. Most autoparts stores, AutoZone, etc, have a scanner and will check it for you at no cost. If you can't get your truck to such a place, you can buy a scanner or USB connector to your laptop. The scanners have a wide range in price.

This is the one I have from a recommendation here,
ScanTool 425801 OBDLink SX USB: OBD Adapter for Windows ($30)

If you are going to be working on your own truck, this is something you really need to have. This version just hooks up to your Windows laptop. If you don't have a windows laptop, there are other versions of this that hook up to your phone, tablet, etc. There are also numerous stand-alone scanners that don't need a computer and just display the codes. These don't have all the software features, like giving you your gas mileage, etc, and can't give you all of the raw output, but they work fine for giving you the codes.

I'm trying to find a good picture of where the engine temp sensor is located on the 4.0 v6......................

top of thermostat housing

The sensor is located in the top of the thermostat housing. With an inexpensive scan type interface you can read the value the PCM is receiving from the sensor. That is the easiest and most accurate way to test the sensor.

I have replaced that sensor and it fixed my problem for about a month, but it still started kinda rough but at least it started. Now today the original issued started again, it not starting. What is going on with my truck lol...again my suggestions? Thank you all so far

Have you managed to check the codes yet?

There is no codes, no check engine lights, nothing....and mechanics can't get it to do what it dose to me. It's started fine last two days but my hopes aren't high of it fixing itself

In park the car also doesn't go over 3,000 rpm when I put pedal to floor

Mines a 2nd gen and does that too, IIRC there's a low rev limiter in park on the 4.0.
