Overheating - Cools down when accelerating

I can provide more information and test as necessary if people are willing to make suggestions that I try something.

I was on my way home from work today and my truck check guage light went on and I looked and the temperature was all the way in the red. As I continued to drive I turned on the heat to relieve some of the pressure which made the gauge go off. As I drove the needle stayed deadly close to the Hot portion of the gauge and I had to go to class. I checked the coolant level and it was reasonably high. I got under the hood and could find no saturation or signs of a leak on any portions of the underbelly.

Anyway. I was on my way home on the freeway and I had the same issue and a new symptom then developed. As I accelerated the temp went down and as I slowed down the temp went up. That led me to think that the fan was not functioning correctly, but then I parked and got out and come to find out the fan was still running correctly and that my belt is in acceptable condition. I have several ideas of what it could be from the Hayne's manual but i wanted to see if anyone had any other ideas besides the thermostat, changing the fluid (which I am doing tomorrow), and the clutch being bad.

If these problems sound like mine please let me know. I have been an explorer owner for 5 years and it is the same one I have had since highschool. I am dying to fix it and cannot afford a new vehicle. I love my exploder.
