I plan to use my truck for the beach and the snow. Tire Rack gave me a recommendation of going to a 255/70/R17 General Grabber AT2 for the all around experience. The difference in height is 1.6" has anyone had issues with this difference under the truck and inside the wheel well? Also if your familiar any recommendations for tire or size? I want to place the largest tire I can on without lifting...yet. Thank you

255/70/17 shouldn't have an issue with those at all, I'm running 265/70/17's right now and have no issue with them. As for brand, I like hankook Dynapro's but tire preference is kind of like oil preference everyone likes their own thing.

I had the Grabber AT2s in 255/60R18, and they were quite impressive. Some noticeable road noise, but they do have pretty noticeable voids. Fine in rain and even in very light snow for me (2wd).
