Weird Overheating issue

2002 Ford Explorer xlt
I have a 2002 explorer xlt. Last year engine blew I swapped out with a 2001 engine. no issues for about 6 months. Then it started overheating. The gauge will bounce sometimes instead of going up slow and down slow. It only happens when I'm maintaining a speed of 60 or more with out letting up the gas. I can maintain high speeds by letting off the gas every 5 seconds and the needle won't move. Also, when it does begin to overheat it immediately drops if I let off the gas OR if I hit the gas hard. Which is weird. I did multiple checks on the gasket for leaks. That's good. Water pump is good. Fan clutch wasn't moving like it should so I replaced that. Replaced thermostat. Replaced one of the radiator hoses that was soft and worn in case it might have been collapsing. Changed the temp sensor. Ruled out the heater core. Don't know where to look from here. any ideas? Thanks.


To add. It only overheats when I maintain the highs speeds but there was one single time that it did overheat while I was idling parked. even then it was bouncing up and down even after I turned the car off and leveled out after a minute.
