i've been doing that with all my vehicles

stock exhaust manifolds

The stock exhaust manifolds on the SOHC V6 are decent and unless you're racing, improving the heads to increase flow or using forced induction I doubt the cost per rwhp gained is justified.

An intake spacer on our engines with plastic intake manifolds is a total waste of money. The only reason to justify one is if you increase the throttle body diameter larger than can be matched to the intake manifold inlet. I installed a tapered spacer to make the transition from a 75 mm throttle body to the stock intake manifold.

I made it out of one of my wife's dishwasher safe cutting boards.

Adjusting the throttle cable length so the throttle plate is wide open when the accelerator is floored is an inexpensive and fairly significant performance improvement.

how do you adjust it?

The FIRST thing you need to check is whether or not it's needed. To do that, disconnect the the intake tube from the throttle body and have somebody floor the gas pedal. With the gas pedal floored, the throttle butterfly should be horizontal in the throttle body. If it is, DO NOT perform this mod as flooring the accelerator pedal would then put extra strain on the pedal mounts, throttle cable, and throttle body itself.
