We have a 2013 Explorer XLT and have noticed a few times that when shutting off the air conditioner by the main knob, it comes right back on. Are we not doing something right?

The only panel I'm familiar with is the Sony touch panel and it has only 1 knob and that is for the radio. I doubt that is the one you are talking about but I'm sure other members will be able to assist.

Do you have manual A/C controls? If so, I recommend checking out the section in the 4th printing of your Owner's Manual that outlines climate control. This information begins on page 157. If you have dual automatic control, information for this system begins on page 159.
