So a little while ago I went through a fairly shallow puddle and sucked in some water. So it got me thinking about air intake. I have searched but have came up blank so I was hoping someone could forward me to a faily detailed diagram/explanation on the air intake system on a 1991 xl?

It's a fairly simple system.

The air intake tube (#5 in the diagram) is mounted to the radiator support to the right of the passenger side headlamp and is secured to the baffle assembly (#9) on the outside of the radiator support. The air intake tube connects to the air cleaner assembly (#1) and the outlet tube (#4) connects to the air cleaner assembly and runs to the throttle body. The outlet tube also has another hose that connects to the oil fill tube and serves to recirculate blow-by back into the engine to be burned.

So where does the air first get sucked into the system? I am looking to block or move (aka snorkel or simple moved out of the water way in the bay) this piece so that I can prevent water from getting sucked in.

#9 on the diagram is the entry point, then it gets sucked up the tube (#5) to the air cleaner, then out to the engine.
