I have tried a couple of times and can't seem to get them out without breaking them. Any advice?

I've talked to many people about removing windshields, and I have never found anyone who said it can be done reliably. You could try what they call piano wire to cut the adhesive that holds the windshield in, but people have told me that if you get into the edge of the glass, it will usually break. Not worth the effort IMO.

If you look around, you may be able to find a glass shop that hasn't inflated their prices because of insurance. I found a shop and got a windshield installed for $100.

I have seen dozens of professional window techs break many a front windshield.

It is the nature of the safety design of front windshields.

With all of that said there are many junk yards that sell used glass.
How do they get them out?

you can get them out if you use lots of soapy water in a spray bottle, and a olfa knife (or a knife that has breakaway blades). keep spraying where you are cutting, and use a small amount of pressure on the blade, and push on the windshield with a very small amount of force. do this from the inside, it will take some time, but it can be done, just like having sex with a sheep, and wearing velcro gloves, difficult, time consuming, but possible!
