From a stand still at a stop light or something like that.

When you go to take off at WOT, the engine basically dies completely and you have to let off the accelerator a little to get it going again.

If I ease on the gas it is fine. It happens Only at WOT. Kinda weird. But it doesnt do it every time. I guess i have to give it just the right amount of throttle for it to cutoff.

Is this some sort of fuel safety cut-off sensor or something like that? Its done it since day one so i dont think there is something malfunctioning.

not normal

That is not normal so something is malfunctioning. My SOHC V6 will even pull strong at WOT when starting from stop in 3rd gear (2). The PCM uses the TPS output voltage to determine if the throttle plate is wide open. I suggest you perform the TPS test procedure in my helpful threads.

Also, if the mixture is too lean the engine will almost die under sudden load. At WOT the PCM ignores the O2 sensors and relies on the MAF sensor and stored tables to adjust the air/fuel ratio. Have you cleaned your MAF sensor with MAF sensor cleaner recently? Have the upper and lower intake manifold gaskets ever been changed? They could be leaking. Do you have any DTCs?

Has the fuel filter been replaced in the last 30,000 miles? Have you checked your fuel pressure? See fuel pressure test procedure in my helpful threads.
