(Admittedly, I'm not the best mechanic.) But on my old Mazda B3000 the fuel hose was just pushed over the ends of the fuel filter and clamped into place.

My '98 Explorer has clamps plus.....a hose attachment that won't pull off and doesn't seem to be affected by attempting to unscrew it.

I'd rather not just pull on it till something gives way. But unscrewing just makes the flex line start to kink.

Any advice?

tfox, you need a special key tool that pushes back the spring to pop the hose off the filter. I believe you have the quick release hoses. Ask your local auto supply shop for the right tool. Make sure you relieve the fuel pressure also before you attempt to remove the filter.
