Sounds like time for a new thermostat. Not too tough to replace, albeit a bit messy.

ditto that...coupled with an air pocket ...your temp can easily shoot up.
 






Yea my 93 Explorer has the same problem we replaced the radiator and than didn't help so we got a thermostat just haven't put it on yet.
 






what are you refilling it with? if you keep putting tap water in there every day you are going to build up minerals that will plug everything. use only distilled or R.O. bottled water with at least 40 % antifreeze. and dont mix the types of antifreeze or they will crystallize also. thermostats can go bad at any time but usually after an engine is over heated. but usually when they quit they just stick open or usually closed and that is it. it sounds like you could be letting it get to low and getting an air lock somewhere.
