Fuel Injector Stuck

If a fuel injector is stuck open, will it cause the the fuel to be too rich, causing heavy black smoke out of the tailpipe during acceleration?

Possibly, yes. Of course there several other possible causes of heavy black smoke out the tailpipe during acceleration. More common than a stuck open injector is a fuel pressure regulator (FPR) with a ruptured diaphragm allowing unmetered fuel into the intake. If the fuel pressure is too high (from a stuck FPR), that will cause it to run rich like that, too. Diagnosing these kinds of fuel system problems starts with a proper fuel pressure test (see the sticky at the top of the Under the Hood forum).
