I'm still getting used to car audio (there is so much more to it then home audio) and would like some ideas/hints on what I am looking at getting.

Pioneer DEH-P3000 head unit; 50 watts max, 22 RMS, 1 - 2 volt preout, CD changer control and ROTARY DIALS.

Pioneer TS-A6865 6x8 speakers; 180 watts max, 50 RMS, 30 -30,000Hz (we can only hear to 20,000Hz so why should my speakers go so high?)

If I get this and am happy then this will be it, if not I'll add in a sub but I can't do it all at once. I also have a sony 10 disc CD changer that uses a FM signal, I assume it will work fine with this, can I control the changer through the deck?

All FM Modulated changers have their own control panel. There is no way to control it via the headunit.
The equipment seems fine for a start.
Just something to consider:

I bought my headunit, and a good 4-channel amp w/built in crossovers to power my door speakers. Since the crossovers cut out the low frequencies to the door speakers, they were able to handle more volume and sounded great with the amplification. I then bought my Kicker sub and my 500s to push out the lows.
I am planning to get tweeters to handle the highs once i get more cash. Build the system based on what you want it to be in the end, and not what will fullfill your needs for now. You will end up changing and spending less in the long-run this way.
 






A friend put in a system similar to mine in a Jeep Grand Cherokee and it sounded great and has lots of volume, another guy I know spent over $2000 US on his system in a Tahoe and except for the over priced system having way too much bass I couldn't tell the difference in sound quality so why bother amping the 4 speakers or going with a $800 head unit.
I don't need pretty graphics or a screen telling me the song name or letting the guy at the end of the street hear my system.
Or am I missing something and will want/need some feature on the expensive head units?
 






A good amp to power your speakers will improve your sound quality drastically. Even though your headunit is rated at 22 watts don't expect more than 15 from it and that's with something like 2% total harmonic distortion. I have a Pioneer headunit the 4100 which has the same internal amplification as the one you are looking at. I switched to a Clarion amplifer to power my speakers. Nothing outrageous but I put around 50-60 watts RMS to each of my 4 speakers and the difference in sound quality will amaze you. The headunit just doesn't put enough power out to power any speaker properly.

You could use the FM modulated changer with this deck. But FM modulated changers suck. Your CD quality sound is degraded to FM quality. If you are looking for sound quality get a CD changer that you can hook directly up to the Pioneer headunit. You can get a Pioneer changer for less than $200. If you want a changer and good SQ get a Pioneer changer and sell the Sony FM unit.

i agree with steve, the FM modulated changers suck.
since you are getin pioneer speakers, i'm pretty sure you will want to add a subwoofer (even a cheap one will be better than none at all). the pioneers are very "bright" sounding speakers. they dont do well in producing lower frequencies. a nice 10" subwoofer will balance out your system nicely, and add to the sound quality.
