Tire size recommendation w/ stock suspension

Hey Guys-
It's time to replace the 245/65/17 tires on my 06 Explorer Eddie Bauer V8. I'd like to increase the size of the tire to fill out the wheel well better, but I am sitting on stock suspension and stock ride height, with no immediate plans for a lift. I am thinking 255/65/17 is a reasonable step up and still within the 3% rule? I found these Falken Wild Peak ATS at a good price in this size.

I also do quite a bit of towing with my rig and I am having alot of trouble finding tires with proper load limits to line up with my tow capacity. It's almost impossible to find a true LT tire in the OEM size, and even this larger Falken tire has a limit of around 2400lbsl. Wondering if anybody else is towing near max capacity (V8) and what tires they went with. Is their a particular size which will fit and is easier to find in LT/6 ply?

Not much LT available in suitable size. I'm not understanding why you need soo much more load capacity. Even with a 7,000 pound trailer with about 800 pounds of tounge weight, you would only be adding about 500 pounds to each rear tire. Even if your explorer weighed 5000 pounds empty you would only have about 1200 pounds on each rear without trailer or about 1700 pounds with trailer. Well within the stock size's capacity if properly inflated.
