Ok I have a 2003 xlt 4.6L v8 with the tow package. I am going to go pick up a car with a tow dolly and it weighs 2700 lbs. Now I have read about the transmission overheating issues and want to know whether this will be fine or not. The trip will be approximately 5.5 hrs with the dolly and car behind it. I am going to have all fluids drained and refilled before the trip and the truck has 175k on it (runs great) please help so if I need to find an alternate way I can.

You should be fine. Stick to about 55-60 MPH and turn the OD off, unless you are driving through really flat roads. This will keep the trans from constantly shifting into and out of OD, thus heating things up even more.
