I'm going to be purchasing a pair of warrior shackles and two 1" AAL's in the rear, 2" spring spacers up front.

What other parts will I need?

New shocks: Front: will still be stock lenth (right?)
Rear: how do I know which shock to buy, will I just tell the dealer that I have an explorer with a 3" lift? How does that work?

Also, will I need any extended brake lines? Drive line extentions? Drop pitman arms? Anything?

Thanks for the help

For a 2" suspension lift, you don't need any of that stuff. Shocks, driveshafts, pitman arm and brake lines will all be fine.

I don't think two 1" AALs in the rear is going to get you 2" of suspension lift. It will most likely get you 1" of lift and some extremely stiff rear leaf packs. If you plan to off-road, stiff leaf packs will make things difficult. You want lift but you also need flex. You may want to consider some leaf packs with the lift built in. But, those aren't cheap. Stock length shocks will be fine. If you are going to off-road, consider some Ranchos or OME shocks. They're made for dealing with off-road conditions.
