regarding a 1978 straight axle Dana 44, are the knuckles right and left specific?

Yes

I guess you could put the left to the right but the camber is going to be totally off and the steering arm will be on the back side.

yes, it should be really easy to tell when you look at them. Steering arm facing front of truck, balljoints towards inside.

how would it affect the camber? the top would still be the top and the bottom would still be on the bottom no matter which side they are on. if you reverse them it would just put your tierod behind the axle which is quite popular. other than rearranging your steering setup, i dont think it would affect the alignment but maybe i am wrong.
